I think videos would be better. For example, in a video, you can see springy hair in motion to get an idea of the hold that a style has or how good the protein/moisture balance is, but you can't tell that from a photo.
Vids definitely! They give the viewer a more accurate portrayal of how a process should go. Even though pictures would have captions, the level of understanding increases with that "live" look. Videos make a complicated looking hairstyle much easier to mimic.
